Pecan Pie Brownies

These Pecan Pie Brownies are the perfect twist on the traditional pie and even more indulgent. A thick and rich chocolate brownie layer topped off with a gooey, syrupy pecan pie filling. Bring these to Thanksgiving and you’ll go down in your family history!

September marks the start of my favourite time of year, the Ber Months! There’s nothing better than September 1st, you can dig out your wooly jumpers, thick tights and bake up a cinnamon scented storm. Autumnal baking is the best of the best, warming and cosy. Pecan pies and cinnamon rolls. The best! So, to kick off the season of yummy treats let me introduce you to my Pecan Pie Brownies. The perfect mix of pecan pie and dark, delectable brownie. These babies always go down a storm in my house and in my bakery. A firm fan favourite.

I sometimes receive comments and messages about brownie or blondie failures or mishaps (some nice, some can be very mean. Remember to be kind guys.) I’ve included a small troubleshooting list below to help you guys out. Brownies are super easy to make but do require a bit of common sense. The biggest tip I can offer is get to know your oven. Invest in an oven thermometer and identify hot spots. It really will transform your baking.

Brownie Troubleshooting:

  • Use the correct size tin. I always recommend using a 9×9″ square tin for the thickest, fudgiest brownies. Using a larger sized tin will alter the size and baking time of the brownie.
  • Most brownie recipes tell you to use the highest quality chocolate you can afford but I always use a supermarket budget brand. Tesco Miss Molly chocolate is my favourite but you can use any brand you like. Use a minimum of 50% cocoa soilds.
  • Make sure your eggs and sugar are mixed together thoroughly. If they’re streaky it will effect the bake.
  • All ovens are different! I can’t stress this one enough. I get so many messages about brownies not being ready after the recommended baking time is up. 30 minutes is usually the optimal time but sometimes they’ll need a little bit more or less. Just keep a close eye on them after 25 minutes and remove from the oven when the edges are set and there is a slight wobble in the centre.
  • Bring your ingredients to room temperature before you begin.
  • Do not, and this is a biggie, over mix your brownies once you add the flour. Over mixing will overwork the gluten and will result in cakey brownies. Unless you prefer cakey brownies, then have at it. Each to their own.
  • Most recipes call for a bain marie (a glass or ceramic bowl set over a pan of simmering water). I’m a lazy girl and if I can cut a corner with no noticeable repercussions, you best bet I’ll do it. I simply heat my butter and chocolate together right in the saucepan (you can use the microwave too). As long as you keep it on a low heat and keep stirring, you’ll be fine with this method.

Here’s what you’re going to need for Pecan Pie Brownies:

  • Unsalted Butter – Make sure your butter is at room temperature before you start, this makes blending the sugar much easier.
  • Caster Sugar – Also called superfine sugar.
  • Eggs – Always large, always free range!
  • Plain Flour – Sometimes called All Purpose flour.
  • Plain Chocolate – Always plain, never milk!
  • Chocolate Chips – I used plain chocolate chips in this recipe but you can use white or milk if you prefer.
  • Pecans – Chopped and toasted.
  • Golden Syrup – You can sub in maple syrup if you prefer.
  • Dark Brown Sugar – Light brown would work here too.
  • Vanilla Extract – The best you can afford.

Tips for making Pecan Pie Brownies:

  • Can I use milk chocolate in the brownie layer? – In short, no! Milk chocolate is far too sweet and your brownie will come out super gross. Always use plain chocolate when making brownies. You can use a 70% solid chocolate if you’re not keen on the higher percentages but I wouldn’t recommend going any lower than that.
  • Can I freeze these brownies? – Yes! You can freeze the whole tray or individual brownies wrapped in a double layer of cling film for up to 3 months. Just defrost at room temperature.
  • Can I make them Gluten Free? – Yes, just use Doves Plain Flour Blend. It’s the best I’ve used for baking.
  • How long will these bad boys last? – Pop the cut brownies in an airtight Tupperware container and keep them in the fridge for up to 1 week.
  • Can I use ingredients straight from the fridge? – You can but it’s best to use room temperature ingredients. This will ensure everything mixes together well and will create the best results.
  • How can I make sure my brownies look neat? – Firstly make sure you’ve chilled your brownies in the fridge, cold brownies cut much more easily than room temperature. Secondly, wipe your knife between each cut. Clean blades make for clean cut brownies.
  • Do I have to let them chill over night? – No, you can eat them as soon as they’re cold but they wont have the same dense, fudgy texture as the ones in the photographs.
  • Can I use a boxed brownie mix? – Yes, of course you can. Just follow the box instructions and add the pecan layer to the top once they’re baked.

Ingredients

Units Scale

For The Brownies:

  • 250g unsalted butter
  • 300g plain chocolate
  • 4 large, free range eggs
  • 350g caster sugar
  • 175g plain flour
  • 100g chocolate chips

Pecan Pie Layer:

  • 50g butter
  • 100g dark brown sugar
  • 60g golden syrup
  • 1 large, free range egg
  • 1tsp vanilla extract
  • 250g pecans, toasted

Instructions

  1. Preheat oven to 170°C and line a 9″x9″ square tin with baking parchment.
  2. In a large heavy bottomed saucepan melt the butter and chocolate together over a low heat. Allow to cool slightly. In the bowl of an electric mixer whisk the eggs and sugar together until light and fluffy. With the mixer on low pour the melted chocolate into the egg mixture in a slow steady stream, mix until combined. Add in the flour and stir until the flour just about disappears, take care not to over mix at this point.
  3.  Using a wooden spoon quickly stir the chocolate chips through the batter.
  4. Pour the batter into the prepared pan and smooth out with the back of a spoon. Bake for 25-30 minutes or until there is just a slight jiggle in the centre of the pan.
  5. Set aside to cool while you make the pecan pie filling.

For the Pecan Pie Filling:

  1. Melt the butter, sugar and syrup together in a medium, heavy bottomed pan over a medium low flame. Stir until smooth then remove from the heat and allow to cool slightly.
  2. Whisk in the egg and vanilla extract followed by the chopped pecans.
  3. Pour the pecan pie filling over the cooled brownie carefully, using a spatular to spread the filling to the edges.  Pop the brownies back in the oven for a further 20-25 minutes until set.
  4. Leave to cool completely, preferably overnight in the fridge. Cut into squares and enjoy.
