Units Scale

For the Cookies:

  • 120g unsalted butter
  • 120g sunflower oil
  • 100g caster sugar
  • 100g icing sugar
  • 1tsp ground ginger
  • 1tsp ground cinnamon
  • 1/2tsp ground allspice
  • 1/4tsp ground cardamom
  • 1 large, free range egg
  • 2tsp vanilla extract
  • 250g plain flour
  • 1/2tsp baking powder
  • 1/2tsp fine salt

For the Cinnamon Sugar:

  • 75g caster sugar
  • 2tsp ground cinnamon

For the chai spiced frosting:

  • 100g unsalted butter
  • 200g icing sugar
  • 1/4tsp ground cinnamon
  • 1/4tsp ground ginger
  • 1/8tsp ground allspice
  • 2tsp whole milk


For the Cookies:

  1. In the bowl of an electric mixer fitted with the paddle attachment mix the butter, oil and sugars until light and creamy. Around 5 minutes, scraping down the bowl from time to time. It may look a bit runny but that’s ok.
  2. Add the egg and vanilla extract and mix to combine. Add the flour, spices, baking powder and salt and with the mixer on the lowest speed mix until just combined.
  3. Cover the bowl with cling film and place in the fridge for at least an hour or up to overnight.
  4. When ready to bake preheat the oven to 175c and line 2 baking sheets with parchment paper. Set aside.
  5. Mix the caster sugar and the cinnamon together in a small bowl and set aside.
  6. Roll two tablespoons of the cookie dough into balls and flatten them out slightly. Roll them in the cinnamon sugar and place on the baking sheet leaving two inches between each cookie to allow for spreading.
  7. Bake for 12-14 minutes until lightly golden. Allow to cool for 10 minutes before transferring to a wire rack to cool completely.

For the Chai Spiced Frosting:

  1. To make the frosting mix the butter in the bowl of an electric mixer until pale and soft. Add the icing sugar, spices and 1tsp of milk and mix on the lowest speed until the sugar is incorporated with the butter then turn the speed up to high. Add more milk if the frosting is a little stiff, you want a good spreading consistency.
  2. Spread a little of the frosting on each cookie and sprinkle with some of the remaining cinnamon sugar.
