Chocolate Chip Pumpkin Loaf

More pumpkin, I told you didn’t I? I can’t get enough! This one is a goodie though, it’s such a fast and easy bake, you could whip it up in your sleep. It’s one bowl so you just dump everything in a bowl, mix together then bake. You can’t get any simpler than that now can you? The hardest part of this whole recipe is waiting for the loaf to cool before slicing. Those oozy, melty chocolate chips are almost to hard to resist!

I simply cannot get enough of this cake. You best believe I made two loafs and popped one in the freezer for next week, it’s my new breakfast ritual. I just cannot rouse myself without the promise of this cake waiting for me in the morning, alongside a steaming cup of tea of course. Want me to let you in on a delicious little secret? Pop a slice of this bad boy under the grill for 30 seconds and slather with Nutella, butter or any other yummy spread you have lying around. I might even try a lashing of raspberry jam tomorrow, can’t hurt right?

Tips for making Chocolate Chip Pumpkin Loaf:

  • Ingredients – Ensure all your ingredients (eggs and butter specifically) are at room temperature before you start. As this is a one bowl recipe it’ll really help all your ingredients blend together easier.
  • Lining you pan – There’s nothing worse than baking a cake and having it stick to the tin, trust me! I like to double up on my anti stick attack, I always grease my tin with cake release (here’s my favourite) then line with baking parchment. That way your cake just slides right out, no mess, no fuss.
  • Chocolate Chips – To prevent your chocolate chips sinking to the bottom of your cake while baking, simply dust them with 1tbsp plain flour before adding to the batter. This will help suspend the chips rather than allowing them to skin.
  • Pumpkin Puree – You can buy pumpkin puree in most UK supermarkets these days, it’s usually found in the American section but if you can’t locate a tin you can always make your own following this guide (Pumpkin Puree)
  • Freezing – This cake freezes beautifully, simply wrap in a double layer of cling film and pop in the freezer for up to 3 months. You can even double the ingredients and make 2 cakes and freeze one for later.

Ingredients

Scale
  • 200g plain flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 200g caster sugar
  • 225g canned pumpkin puree
  • 160ml sunflower oil
  • 2 large, free range eggs
  • 1 teaspoon vanilla extract
  • 250g plain chocolate chips, divided

Instructions

  1. Preheat the oven to 170C and grease and line a loaf tin with baking parchment.
  2. In the bowl of an electric mixer add the sugar, pumpkin puree, sunflower oil, eggs and vanilla extract and mix to combine. Add the flour, spices, salt and the baking powder to the pumpkin and mix until just combined.
  3. Add 200g of the chocolate chips to the pumped batter and stir until just combined. Pour the batter into the prepared pan and sprinkle the remaining chocolate chips over the top of the loaf.
  4. Bake for 60-65 minutes until a skewer inserted into the center of the cake comes out clean.
  5. Allow to cool completely before removing from the tin, slice and serve.

Notes

Cake can be frozen for up to 3 months wrapped in a double layer of clingfilm.

If you have issues with chocolate chips sinking to the bottom of your cakes just dust them in a teaspoon of plain flour before adding to the batter.
